

The Florida Stone Crab is a crab found off the coast of the Florida Keys. They can also be found in the North Atlantic, from Connecticut to Belize, including Texas, the Gulf of Mexico, Cuba, the Bahamas, and the East Coast of the United States. One of the claws is removed from each crab and then the crab is placed back in the ocean where the claw regenerates. The claws are normally cooked immediately after caught and collected to keep the meat from sticking to the claw.
With Stone Crabs, unlike other species of crab, the claws are the only edible part of the animal. It is a seasonal dish, only caught and served from October 15th until May 15th. Stone Crab claws “uncracked” remain fresh for a period of 48 hours, however; after that freezing is required.
